Memorial Day Menu

In 2023 Memorial Day falls on May 29.  As the unofficial start of summer, many families and friends gather to grill and party.  Here are a pre-meal dip, a couple of burger ideas, a side, a veg, and a dessert.

Roasted Red Pepper Dip

Ingredients:

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 roasted red bell peppers
  • 2 teaspoons red wine vinegar
  • 1 teaspoon sriracha sauce, optional
  • ½ teaspoon paprika
  • salt and pepper to taste

Directions:

  • Heat olive oil in a small skillet over medium-high heat. Saute garlic in hot oil until fragrant, about 1 minute.
  • Blend garlic, red bell peppers, red wine vinegar, sriracha sauce, paprika, salt, and pepper in a blender until smooth.

Burger Mix

Ingredients:

  • 1 ½ pounds lean ground beef
  • ½ onion, finely chopped
  • ½ cup shredded Colby Jack or Cheddar cheese
  • 1 egg
  • 1 (1 ounce) envelope dry onion soup mix
  • 1 clove garlic, minced
  • 1 tablespoon garlic powder
  • 1 teaspoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed dried rosemary
  • salt and pepper to taste

Directions:

  • Combine all ingredients and form into patties.
  • Cook on a preheated grill until no longer pink in the center, the juices run clear, and at least 165 degrees internal temperature.

Beer Burgers

Ingredients:

  • 1 pound ground beef
  • ½ cup beer
  • ¼ cup Worcestershire sauce
  • 1 teaspoon garlic powder
  • onion salt and pepper to taste

Directions:

  • Shape the ground beef into patties. Place in a shallow dish.
  • For the marinade, combine beer, Worcestershire sauce, garlic powder, onion salt, and pepper.
  • Pour the marinade over the burgers and refrigerate for 15 minutes. Flip the burgers and allow to sit for another 15 minutes.
  • Cook on a preheated grill until no longer pink in the center, the juices run clear, and at least 165 degrees internal temperature.

Cauliflower and Tomatos

Ingredients:

  • ⅓ cup extra-virgin olive oil
  • 3 tablespoons white wine vinegar
  • 1 teaspoon fresh lemon juice, or more to taste
  • salt and pepper to taste
  • 1 large head cauliflower, chopped small
  • ¼ cup minced red onion
  • ¼ cup minced fresh parsley
  • 2 garlic cloves, minced
  • 1 cup cherry or grape tomatoes, halved, or more to taste

Directions:

  • Whisk olive oil, vinegar, lemon juice, salt, and pepper together in a bowl until dressing is smooth.
  • Mix cauliflower, red onion, parsley, and garlic together in a large bowl. Drizzle dressing over cauliflower mixture; toss to coat. Gently fold tomatoes into salad. Chill in refrigerator up to 3 hours before serving.

BLT Pasta Salad

Ingredients:

  • 1 (16 ounce) package medium seashell pasta
  • 1 pound sliced bacon
  • 1 ½ cups light Ranch-style salad dressing
  • 1 small onion, chopped
  • 2 tomatoes, chopped

Directions:

  • Bring a large pot of salted water to a boil. Add pasta, and cook until tender. Drain, and rinse under cold water to cool.
  • Meanwhile, cook the bacon until browned and crisp. Remove from the pan and drain on paper towels.
  • In a large bowl, stir together Ranch dressing, onion, and tomatoes. Mix in the cooled pasta. The pasta will absorb some of the dressing, so don’t worry if it seems like too much. Refrigerate for several hours or overnight. Crumble bacon over the top just before serving.

Mixed Berry Cobbler

Ingredients:

  • 4 tablespoons butter
  • ¾ cup all-purpose flour
  • ¾ cup sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup milk
  • 2 cups of berries or a combination of fruits (or a 12-ounce package of frozen berries, thawed)
  • 1 tablespoon sugar

Directions:

  • Put butter in an 8-inch square or 9-inch round pan; place in the oven until butter is melted. Remove the pan from the oven and set aside.
  • Whisk flour, 3/4 cup sugar, baking powder, and salt in a medium bowl. Whisk in milk until a smooth batter forms
  • Pour batter into the prepared pan with melted butter.
  • Scatter fruit over batter. Sprinkle with 1 tablespoon sugar.
  • Bake in a 350 degree preheated oven until the top is lightly browned and fruit bubbles, 50 to 60 minutes.
