Before the sparklers and the oohs and aahs for the fireworks display, comes the food.
Pimento Cheese Sausage Balls
Ingredients:
- 1 pound ground pork sausage
- 2 ½ cups all-purpose baking mix (like Bisquik)
- 1 ½ cups pimento cheese
- 2 tablespoons fresh chives, chopped
Directions:
- Preheat oven to 350
- Combine all ingredients in a medium bowl and mix well.
- Shape into 1-inch balls and place on baking sheets lined with parchment paper.
- Bake in the preheated oven 14 to 17 minutes until lightly golden. Cool on wire rack 10 minutes.
Tomato, Peach, and Corn Salad
Ingredients:
- 2 large tomatoes, cut into wedges
- 1 peach (about 1 cup), diced
- 1 cup corn kernels
- salt and pepper to taste
- ¼ cup Honey Vinaigrette dressing (see below)
- ½ cup feta cheese, crumbled
Directions:
- Combine tomato, peach and corn in a bowl. Add salt and pepper.
- Drizzle with dressing and toss.
- Top with feta.
Honey Vinaigrette
Ingredients:
- ½ cup canola oil
- 1/3 cup white balsamic vinegar
- 2 tablespoons honey
- 2 teaspoons red onion or shallot, minced
- salt and pepper to taste
Directions:
- Combine all ingredients in a jar. Cover with lid and shake until blended.
Turkey Cheeseburgers
Ingredients:
- ½ cup butter
- 1 pound lean ground turkey
- 2 teaspoons poultry seasoning
- salt and pepper to taste
- 4 slices provolone cheese
- 4 hamburger buns
Directions:
- Coarse grate butter. Gently combine butter, turkey and poultry seasoning. Shape into patties; cover and chill for at least 30 minutes and up to 8 hours.
- Preheat grill to medium-high. Place cast iron griddle plate or skillet on grill and preheat. Remove patties from refrigerator and season with salt and pepper.
- Cook covered until seared on each side. Continue cooking until internal temperature is at least 165 degrees. Add cheese and serve on buns with condiments.
Independence Day Punch
Ingredients:
- 8 cups seedless watermelon, cubed
- ¾ cup granulated sugar
- ½ cup fresh lime juice
- 2 tablespoons fresh ginger, grated
- 1 cup pineapple juice, chilled
- 1 can club soda, chilled
- 2 cups vodka, rum, or tequila, optional
Directions:
- Process watermelon in a blender until smooth (in batches). Pour through a fine mesh strainer to remove any solids.
- Whisk sugar, lime juice, and ginger until the sugar dissolves. Add to the watermelon in a pitcher. Add pineapple juice and club soda. Add alcohol if desired.
- Serve in tall glasses over ice.
Red, White, and Blue Dump Cake
Ingredients:
- 1 (21 ounce) can strawberry pie filling
- 1 cup frozen blueberries
- 1 box white cake mix
- ½ cup butter, melted
Directions:
- Preheat oven to 325.
- Dump pie filling into a 9 X 12 inch baking dish. Sprinkle with blueberries. Pour dry cake mix over the top of the fruit. Drizzle melted butter on top. No need to mix or stir.
- Bake about 45 minutes until the top is golden brown.
